FAQ

What’s the difference between 15° and 20°?

A 15° per side edge feels razor-sharp and precise but is a bit more delicate. 20° is more durable for everyday use. Many Western kitchen knives ship between 15–20°. Switching from 20° to 15° increases sharpness but may require more frequent touch-ups.

Is it suitable for serrated knives (e.g., bread knives)?

No. Serrated edges need dedicated tools. Using a flat/rolling guide can grind down the teeth and damage the abrasive.

How long does the abrasive last?

The insert uses a very hard medium (e.g., tungsten carbide or diamond coating). With proper use it’s highly durable and rarely needs replacement. Wipe off steel dust regularly.

How long until my knife is sharp?

The first session establishes a consistent angle and typically takes about 2–6 minutes (longer for very hard steels). After that, touch-ups usually require only a few passes per side.

What about tall/wide blades (e.g., Chinese cleavers)?

Place the sharpener on a stable riser (cutting board, etc.) so the roller tracks at edge height and the angle stays consistent.

Can I sharpen single-bevel (Japanese) knives?

Yes. For single-bevel blades, sharpen only the beveled side and de-burr the flat side lightly. Use light pressure and keep the angle steady.

Can I sharpen ceramic knives?

Not recommended. Ceramic blades are very hard and brittle and are outside the intended use.

Is it suitable for Damascus/Japanese high-performance steels?

Yes, for straight steel edges. Use moderate pressure and select 15–20° per manufacturer guidance.

Why coarse and fine stages?

  • Coarse (e.g., tungsten carbide/diamond): Quickly restores the edge with controlled removal.
  • Fine/Polish (e.g., stainless/ceramic stropping roller or leather): Removes the burr and smooths the edge. A few passes are enough.

How do I use it correctly?

  1. Secure the blade and align the edge to the roller.
  2. Make light-pressure passes (5–10 per side).
  3. Remove the burr (strop/leather) and wipe the blade.
  4. Repeat if needed—less pressure = less steel removal.

Safety & care

Work on a non-slip surface, move away from hands, keep out of reach of children. Clean dry, do not soak, store dry.
